Puerto Rico has extraordinary culinary talent and restaurants with deep cultural roots—places that carry stories, traditions, and identity. Too many restaurants struggle or close, not because the food isn’t good, but because the systems behind the food often live in people’s heads: recipes, training, ordering habits, and standards. When key people leave, quality can drift fast. What a restaurant represents can fade—not from lack of heart, but from lack of infrastructure. This pilot exists to prove one thing: when we preserve the system, we preserve the culture.

We’re launching a community nomination campaign across Puerto Rico. First, the public will nominate restaurants with deep cultural impact—places that matter and deserve to be protected. We’ll select one restaurant based on cultural significance, readiness to collaborate, and the likelihood that our tools will protect their legacy. Our Puerto Rican crew will visit, document the restaurant’s story, and capture the history, values, and vision behind the food. Then, we’ll build a complete operational backbone: a recipe book, training manual, SOPs, ordering guide, and training videos. This foundation will help the restaurant’s quality and culture survive turnover and time.

The best part? We’ll release the entire process as free educational content, so other restaurants—and anyone with the drive—can apply the same tools themselves. The goal is bigger than one restaurant: preserve Puerto Rico’s culinary legacy, give teams clarity and training tools, reduce burnout, and help restaurants stay true to what they represent.
