Hello everyone! My name is Denis and I come here to tell you a story. I have always loved music and cooking, and I am trying to find a way in which I could combine these two arts. Recently, I discovered the perfect culinary summer course in London. Cooking is one of my big passions and I would love to learn everything about it… but for that I need your help!

My background:

I come from Portugal and I am currently studying classic violin in the Netherlands. Music taught me creativity, persistence, patience, etc… but must of all, passion. As you might know, the music world can be cruel sometimes, and it is often viewed with judgement. “It is not a real job, you should do it as a hobby”, “How are you going to support yourself if you don’t turn up to be a soloist or play in a good orchestra?”, “You will never be good enough”: these are just some of the sentences that a musician tends to hear throughout their lives. And, unfortunately, the judgement doesn’t only come from the outside of the music world. The way you play will always be judge. If you want to try something different and a little unconventional, you will be judge. If you want to explore a different area, try another passion, everyone will say that you are just giving up on music. But we are not the only ones affected by this. Our families always end up in the middle of the crossfire. Why would they do so many sacrifices for us if we are going to a profession in which just a few can survive? Why would they support us if we could just have a “regular and stable job”? If we fail, it feels for them that they also did.

However, that social pressure is often the thing that stops us from trying new things and going on new adventures. But why should we be affected by that? After all, it is the trying, failing and succeeding that make life interesting.

Today, I am here to tell you about my other passion that I would love to explore. After all, we just live once… why not take this one chance of fulfilling our dreams?

I have always loved cooking, and not only for myself, but for others. Good food and good company are the perfect combination. I love the faces of the people when they try that first bite, I love the conversations and laughter at the table, or even that long silence when everyone is enjoying their food so much that there is no time to talk, like there was already a conversation happening between each person and their plate.

I would love to know more about culinary and the ways you can play with people senses to give them the best experience possible. When I discovered that Le Cordon Bleu offered the chance of a summer course for beginners, I knew I couldn’t miss it. It is the perfect chance for me to explore this culinary dream without interfering with my studies. And who knows, maybe I will be able to combine music and culinary after I know more about this world. They are both art for me, and they are both about giving an experience and an entertainment. With both, it is possible to identify a culture and pass on tradition. The possibilities are endless if you only dare to keep an open mind.

The course:

During the summer period, Le Cordon Bleu offers the chance to complete their Basic and Intermediate Cuisine Certificates as an intensive program (6 to 7 weeks instead of 3 months). These two certificates, combined with the Superior Cuisine Certificate, culminate in the Diplôme de Cuisine.

Basic Cuisine is a full-time course that opens the door to the mastery of classic French cuisine techniques. From day one, you'll begin to develop the basic skills: from how to hold a knife properly, peel vegetables and truss a chicken. As the term progresses, techniques become more complex. Students will learn how to use and integrate condiments, herbs, and spices which complement the dishes they prepare. This course provides a solid grounding in basic cuisine techniques and is designed for beginners and experienced cooks alike. Basic Cuisine is the first step in completing your Diplôme de Cuisine.”

“The Intermediate Cuisine certificate is a full-time course that introduces you to classic French regional dishes and European cuisine techniques, through which you will apply the techniques introduced during the Basic Cuisine certificate course. Through practice and repetition, you'll begin to perform tasks instinctively and with greater ease. Intermediate Cuisine emphasises the importance of mise en place: understanding, organisation and production. Demonstrations highlight various kinds of presentations from platter to plate, and become more menu-oriented, incorporating elements such as planning and timing. Intermediate Cuisine is the second certificate needed to complete our renowned Diplôme de Cuisine.”

Why crowdfunding:

Apart from my studies, I am currently working a part-time job and trying to support myself as much as I can. As you can imagine, trying to support these big dreams myself is currently impossible and that is why I decided to start this crowdfunding, as well as an youtube channel, in which I cook simple and cheap meals, combining it with classical music.

The Costs:

Any contribution given will go straight to this project. To complete the Basic and Intermediate Cuisine Courses, for the financial help of the stay in London and also to pay for the GoFundMe commission, it is needed 18 754,79€.

The 18 754,79€ I hope to earn will pay:

·       Basic Cuisine Certificate: £8045 = 9388,54€

If everything goes well, I will attend this course in the summer of 2022, between July 1st and August 12th.

·       Intermediate Cuisine Certificate: £7169 = 8366,25€

This course will be attended in the summer of 2023 (dates to be announced).

·       Stay in London during the summer of 2022: 1000€

According to some websites: Unsurprisingly, accommodation is the biggest spend for students in London per month at an average of £840 (980,33€). This money will be used to help pay for my accommodation.

Total: 18 754,79€

Note: My first goal is to obtain 10 388,54€, which will pay for the first course, that I hope to attend next year, 2022, and will help with my accommodation in London.
