We know there are so many questions, and we truly appreciate your patience while we work through everything. We also want to share that the staff has received their paychecks. In the middle of all of this, making sure the people who show up every day are taken care of was incredibly important to us. To everyone who has stood by us…thank you. Hi. I’m Therese. I work at Giovanni’s Dillicious Pickles.

I’m writing this because Gabby would never ask for help herself.

A pipe burst in the apartment above the restaurant and water poured straight into the kitchen. It came through the ceiling, into the equipment, onto the floors. The entire kitchen is unusable right now.

Thankfully, this happened on a day we were closed. No staff were there. No customers were inside. No one was hurt.

But the damage is significant, and we are closed until further notice.

If you know Gabby, you know she is the first person people call when something goes wrong.

She has opened the restaurant during power outages so families could warm up.
She has fed people who could not afford a meal.
She has adopted families at Christmas.
She has raised money for local children.
She has donated to schools, sports teams, and community drives.
She has given gift cards to people going through hard times.
She is more worried about the pantry that we have in our store for those in need worried they won’t have food
She has used her platform to unite this community .
She has shown up for this community again and again.

She does all of that while raising five kids and running this business every single day.

I saw her cry.

Not because she is quitting.
Because this is overwhelming.

Many people have asked, “Won’t insurance cover this?”

We are working with insurance. But insurance does not write a check overnight.

There are inspections, approvals, waiting periods, deductibles, and items that are only partially covered or not covered at all.

Insurance does not immediately replace lost income while the doors are closed.
It does not instantly restock thousands of dollars in food that had to be thrown out.
It does not advance payroll.
It does not pause rent, utilities, and ongoing monthly expenses.
It does not move at the speed a small business needs to survive.

Right now the bills continue, even though revenue has stopped.

Funds raised here are not meant to replace insurance. They are meant to bridge the gap while insurance processes and while repairs begin. They help cleanup start immediately instead of waiting weeks. They help stabilize the business so reopening can happen sooner.

Giovanni’s is more than a restaurant. It is part of this community.

Gabby will say they will figure it out. She always does.

But this is one of those moments where she should not have to figure it out alone.
