Eric’s “A Southern Kitchen” Needs Your Help

A new kind of restaurant is trying to happen in Salida, Colorado, and frankly, it’s about time!….. but we need a little help.

A lot of you may recognize this guy as Eric, the mailman, or the guy that worked at Walmart, or Columbine retirement home, or just know him as that nice guy with the southern drawl.

He’s a hard working guy with a big dream, but little means, trying to do it all by himself, on a shoestring budget and he hates asking people for help, which is where I come in.

He’s wanted to share his culinary talents somewhere he loves and feels a part of the community and let me tell you, if you’ve been one of the lucky few to try his Gumbo, you know! I have, as well as a few other amazing creations, like the “dirty ham Sammy”… one word. YUM!

(You may have already seen the sign in the window and renovations beginning, at 215 F street, across from the natural grocers!)

Eric Gilmore is Louisiana born and raised, with a family background in bluegrass music. His father, Larry was very talented and played several instruments with some big names in the business. He shared his passion with his son, from an early age and if you’re lucky enough, (and donate a little, wink wink) you might get to hear him “throw down”!

A couple years ago, when Larry was visiting Eric, in Poncha Springs, where he lived at the time, to help him get established and start a business, Larry suddenly and unexpectedly passed away, from natural causes, leaving Eric to handle all his affairs and had to sell off most of their combined music gear and his vehicles, to pay for the costs involved in returning him home and laying him to rest.

I’m Chris, his first friend in Colorado. I live in the Denver area and grew up in Colorado and have a few friends in Salida.

The reason I’m putting this fundraiser together is, he needs a lot of help, not just financially, but volunteers with trade skills and some spare parts, of many types……

I’m already helping with what I have, a little funding and a bunch of materials and labor, I’m the one building the bar(s).

He’s too proud to ask for it, but not too proud to accept, so please donate what you can, to make this dream happen, not only for him, but for the whole community!
