Our passion is health, both in living a vibrant and healthy life, and sharing health with others. We want Vego to manifest our passion for health to the community.

Vego’s mission is to show the community of Greater Atlanta, that a plant-based diet can be delicious, simple, and healthy, and can have tremendous positive effects on one’s physical, mental, and spiritual well-being. To educate people about how nutrition can help with living a holistic healthy life.  This will be accomplished by delivering fresh, healthy, all natural plant-based food, and by providing community programs emphasizing healthy living, such as cooking classes, and health seminars.

We have already leased a space!
Vego will be a single brick and mortar unit, medium-sized, modern fast-casual restaurant, with an approximate size of 1,200 sf, sitting 30 people (both interior and exterior seating). The restaurant will be located in the Brookwood Plaza in Cobb County, next to the Austell L.A. Fitness and close to Cobb Hospital. We focus on healthy, organic, plant-based food. Most important to us is health: health of our customers with the food we serve; and the health of our business finances and success, both of which we believe will be achieved by offering high-quality service and healthy food.

Company Ownership
Vego Bistro LLC is a manager-managed limited liability company, with S-Corp taxation, owned by its founders, Lindsay and David Esterline. The LLC has been registered with the State of Georgia as of February, 2016.  Additional LLC members will be considered based on level of investments (both capital and/or services) and commitment.

We are getting closer to our dream of opening the restaurant. We are currently using the kitchen for our food truck operations, but the cold weather is really limiting our opportunities. We are just over $20k away from opening. Here is a photo of our newly replaced grease trap that the County required. It's huge! And, the smallest they allow. We appreciate anything you may be willing to give.

Hello! If all goes well with the scheduled inspections, we will have our truck permit by the end of this month! But we are still a LONG way off from being a restaurant. We are currently renovating our newly leased kitchen space in the Brookwood Plaza. Things are not going a smoothly as we had hoped, but we feel we are on track to get our commissary kitchen permit by the end of the month so that the truck can be back in operation ASAP! The restaurant will open as soon as we have the funds to finish out the space with the equipment listed, as well as seating! Thank you for your support!

We have been blessed in so many ways since we last posted an update. We have our truck, and are operating as much as we can. You can check out ouro website at www.vegobistro.com. It's difficult finding locations to sell, but we are almost permitted in Fulton County as well, which will open up some more locations.
Now, we feel another door is opening for us. Our lease at our current commissary kitchen (this is required by the state health codes) is ending in March. Our current landlord (another food truck), who we sublease from, is leaving the space before May to start their restaurant. They prefer to transfer the lease agreement to one of the current trucks in the kitchen. The lease with the building landlord is for five more years.
In order to step in as the new kitchen manager/lease holder, we need to replace the equipment that is leaving and to install a new exterior mop sink, which is being required by the County Health Department.
If we become the lease holder and maintain the subleased trucks, then our truck's rent will be covered and we'll have additional income from the other trucks renting spaces.
The equipment we need to purchase totals $7,500. The plumbing required is about $2,000. The other expenses needed to transfer the lease and permits is $1,500. Totaling $11,000.
