After working for over 25 years as a public-school teacher in the state of New Mexico, I have decided that I want to work for myself! I am excited to begin this next phase with the love, help and support of the community in which I have invested my life.
My goal:
To cook and sell tasty, healthy, locally-sourced (when possible), reasonably-priced food at events around Bernalillo County from a food trailer. Some of you have seen my menu postings on Facebook through the years and many of you can attest to my cooking acumen!
Why do I want to do this?
· I have been catering custom-menu private parties of 10-100 for the last couple of years, so I have a good handle on what it will take to prepare volumes of good food; I know what I'm getting in to
· I love to see people enjoy my food!
· I like the idea of being my own boss and making my own schedule
· This will leave me time to spend with sweet LillyB!
“How can I help?” you may ask. I need some start-up capital to help buy my trailer, equipment, pay licensing fees, and insurance.
Currently, I am writing a business plan (think major homework assignment with real consequences instead of a grade!) and have my eye on a beautiful trailer. I would begin full service after I retire in May of 2018 and I want to get everything in order before then. I may also ask some of you for marketing research help including: marketing strategies and ideas, favorite menu items, and even food tastings! #LilRedBird

Food trucks remain one of the fastest growing segments of the food service industry. (industry report) They require less start-up capital than bricks-and-mortar restaurants and you can work the hours that suit you. With my willingness to work hard, problem solve and do business in a way that supports my community, I think I could make enough to supplement the loss of salary I would experience from retiring.
I need your help getting started. As many of you know, I have always taught my students the value of collective action. $20 by itself is not that much, but $20 multiplied by 200 people gets me much closer to what I will need to make this work. My BIG goal is $10,000 and your donation in any amount will get me to this target. Help in any amount is deeply appreciated! The three largest local donations can expect to enjoy a free meal from my truck when I am set up!
