Living in Worcester, MA, Inés Berón and Walter Rodríguez would bring their delicious, homemade Uruguayan empanadas to meetings and potlucks to the unending gratitude of friends and colleagues. When they moved to Oregon to be closer to their children, they not only left behind their beloved community, but also found themselves starting from scratch, which proved extremely difficult in Portland’s tight job market. But because nothing can stop these two, PDX Empanadas was born!

Four years ago, PDX Empanadas was one of the lucky few businesses invited to join Portland’s finest artisans and food vendors at the iconic Portland Saturday Market.



On Sunday, November 19, while returning home from the Market, Inés and Walter were hit by a truck—they are OK, but their van will need repairs and their customized empanadas trailer was totaled.  

Instead of getting ready for a profitable holiday season, Inés and Walter have been left with no means to earn a living.

While insurance covers the van, the money will not be enough to replace the trailer, which costs (used) around $30,000.
