YOLANDA'S STORY. August 10, 2022, was an ordinary early workday at Toasted in Huntsville, Texas for Yolanda M. Thomas. For years, Yolanda has been the heartbeat of this popular breakfast and lunch eatery just across the street from the campus of Sam Houston State University. Yolanda suffered a major stroke within a few minutes of arriving to work. This life-altering health event has financially devasted Yolanda and her family. She now faces high hospital costs, physical and rehabilitative therapy, medications, sustained medical care, and loss of the workday routine and unique customers at the Toasted Restaurant that she loves so much.
