Hi hello! I'm Stacie — owner + chef at Veg.Edible. Every single thing my partner Matt and I create is vegan, gluten-free and nut-free (contains coconut) with soy-free options. We believe that everyone should be able to enjoy fresh, flavorful food regardless of allergies or dietary preferences. You deserve to know what is in your food.
Ingredient transparency is so important to us.

We have found the perfect opportunity for Veg.Edible to open up shop. I’ve put 15k down and need to source 15k to cover equipment purchases, permits and brand build out. 

Omaha has been begging us to open up a dedicated facility and this opportunity landed in our lap. We want nothing more than to open our doors to the community to provide hot plates of food, delivery, baked goods, ice cream, catering and to continue stocking our retail partners.

The space is completely built out, ready to open after a coat of paint on the walls. I plan on making no major changes or doing any construction.

Our mission is to encourage everyone to embrace the flavors of plant-based food — whether you've been vegan since the 90's or you're plant-curious, our food is scratch-made with high quality ingredients and inclusive intention.
You won't find allergen friendly food this satisfying anywhere else.

Born and raised in South Omaha, I have been in the food service industry for 15 years. I am very familiar with all of the incredible food options my city is spoiled with. If you're from around here, I've probably served you at some point. The food service industry has always been my passion. I've hustled every position from busser to host, server to bartender and managed multiple locations of corporate chains and local staples. I know my way around a kitchen and I'm finding my way to your heart with my meals + munchies.

Although I love my city, I found that Omaha does not have many options when it comes to vegan AND gluten-free. Cross-contamination is almost always an issue. General knowledge of ingredients and preparation protocol is usually not thouroughly taught to wait staff. I know how it feels to ask a million questions when ordering take out to ensure you don't make yourself sick or violate your personal choices and beliefs.
I love feeding people and created Veg.Edible to spread awareness about allergen friendly options and that safe food handling should be taken seriously.
I have been vegan for 5 years. I am not diagnosed with a nut allergy or gluten intolerance. Gluten just doesn't make me feel great so I try to eliminate it or face the consequences. Most vegan substitutes are nut based so I decided to go the extra mile and eliminate nuts in my kitchen space to cater to those with peanut/treenut allergies as well.

I chose to go vegan in December of 2017 on a flight back from San Diego. My boyfriend at the time had gone vegan about 6 months prior to this trip and I thought it was the weirdest thing. I accidentally ate vegan the whole time we were in San Diego and loved it! On the flight home, I watched “What the Health” which is a documentary directed by Kip Anderson - same director of Cowspiracy and Seaspiracy which I highly recommend watching. These documentaries are about the link between diet, disease, dollars and everything in between they don’t want the general public to know. I was intrigued by a story in this documentary from a woman with chronic asthma. She was on 18 different medications just to be able to breathe and by changing her diet to a plant based diet it allowed her to heal and get off most of her medication. This hit home with me since I was diagnosed with chronic asthma in 6th grade. I was taking 4 different costly medications for my asthma at the time without health insurance. Initially I went vegan for my health but quickly learned about the treatment of animals, especially in factory farming and the impact it has on the earth.

I am vegan for my health, for the animals, for the planet and for our future.
