Hi, my name is Meggan! You might know me as the creator of Cooking on Caffeine - a vegan and allergy-friendly recipe site, or from [im]possible: the bakery, the inclusive vegan bakery in Harlingen.
Now, my chef friend Luis and I are joining forces to bring a brand new food truck concept to the area, and are seeking funding to bring the idea to reality.
Like many of the other folks in the RGV, especially in the Harlingen area, I’ve been frustrated by the lack of vegan and dairy/egg free restaurant options around me. I’m tired of grabbing a plain and dry Whopper when out and about or only getting fries or plain red spaghetti when dining with family.
A vegan and allergy-friendly eatery is long overdue for our little spot in Texas!
Pasta La Madre is the answer to that need.
Pasta La Madre will be both a create-your-own-pasta restaurant, where you’ll be able to choose from a plethora of veggies and other ingredients to add in to your pasta and sauce of choice, as well as a place to try our unique and fun recipes that will put omni food to shame.
Our goal is to be as inclusive as possible - having delicious food that will fill you up without emptying your wallet, no matter what your dietary restrictions are.
Giving back to the community will also be a central tenet of the business: we plan on having pay-what-you-can meals available for those who may need a little help, and letting other guests pay plates forward if they want to join in the generosity.
We will also strive to be as eco-friendly as possible, constantly and consistently looking for ways to reduce our footprint while simultaneously filling as much of the culinary void here that we possibly can.
Pasta La Madre will bring delicious eats to everyone, no matter who they are or how they need to eat. Because we are sick and tired of not having access to delicious food that’s also safe food!
THIS IS WHERE YOU COME IN!
We have an opportunity to buy a food trailer for a really amazing price, and are hoping the local vegan and allergy community will join arms with us to make it happen.
• The deposit for the truck is $2,000
• Rent will be $400/mo. We want at least five months saved up to be safe. That’s another $2,000
• We estimate $3,000 for repairs and improvements to bring it up to code, to pass a health inspection
• Another $1,200 for starting inventory
• $500 for eco-friendly packaging
• $1,500 for insurance and licensing/permits
• $500 for the POS system and paper goods
• The remainder would be used for anything that pops up and requires financial attention
