My brother and Fabiola came to the United States with dreams of building a better life. They met in school, fell in love, and after years of hard work got married and began growing their family. With baby number three on the way, they took a leap of faith and launched their food truck business, which has now been operating for three months.

On February 8th, they welcomed their beautiful baby boy, Enzo. Shortly after birth, he was diagnosed with Polymicrogyria, a neurological condition affecting brain development. After being transferred to the Children’s Hospital for further testing and care, doctors discovered he also has Zellweger syndrome, a rare and fatal disease that means his time with his family will be heartbreakingly short.
