Update Happy Monday, friends & and family. I figured today would be a good day to give you an update. It’s hard to believe how good I’m feeling after a year of pretty much hopelessness… My bad days are almost non-existent, with maybe 1 or 2 here and there. I’ve gotten to catch up with many of you out on the food truck, and I’m so thankful for that! We go to a few doctors appointments a month now and have a great team of specialists that I am truly grateful for. They showed me so much empathy from the beginning even when I believed my symptoms were unbelievable because no one on the outside could see how I was feeling. The detes … Ryan and I finally know what caused my stroke - it turns out I have a hole in the upper chamber of my beautiful heart. This allowed a blood clot to travel to my brain. The next step is surgery to close the hole. I wish I had news about the mediastinal mass as it weighs heavily on my mind, but we won’t know more about that until next month. Right now, Ryan and I are beyond excited for this summer with the kids, to get out on the food truck and to just be doing the things we love. At the end of November, our sister Natali’s world was rocked by some devastating health issues. Following tests due to a decline in her cognitive function—which we found out was the result of a stroke—we thought that would be the worst of the news received. However, we recently found out that she has a mass in her chest that doctors believe could have caused the stroke. This mass is pressing against the aortic valve, and Natali will have to be seen by several specialists to figure out the next steps in her health and recovery. She and her family have a very long and uncertain future ahead of them.

As you can imagine, the upcoming medical journey will create expenses their family will face that will be high, due to less time being spent operating their food truck since she has tremors and dizziness, making daily tasks harder to do. Natali and her husband own a small business called Colorado Coney Company, which they both love to serve their local community from. Unfortunately, during this time, Natali has had to make the decision to spend less time helping during the holiday season to focus on her health and appointments. Ryan will also be taking on fewer locations to help care for Natali and their small kids.
