Hi, friends! I’m on a mission to bring back one of the most delicious, time-honored cooking fats—schmaltz. Once a staple in homes throughout the diaspora, this golden, rendered chicken fat is not only packed with rich flavor but is also a nourishing, wholesome alternative to industrial seed oils.

I’m launching a small-batch schmaltz and crispy chicken cracklings brand, to share this culinary treasure with the world. Using local kosher chicken skins, I will make schmaltz accessible to everyone, and kick out antiquated canola/seed oils—eventually to put schmaltz in every kitchen in America!
