During the early morning hours of January 5, 2026, the Blind Pig Butchery in Waxahachie, TX, suffered a devastating structure fire, forcing the closure of our friends' newly opened business for the foreseeable future.






Jay & Amber DeSimone lost not only the structure of the building that they adored and worked so hard to restore, but also their business after only a few short months of being open. The funds raised in this fundraiser will help them bridge the gap of a closed business and rebuilding.

In late 2023, Jay & Amber purchased the building that was formerly the historic Catfish Plantation restaurant. After almost two years of planning and full restoration of the building, the Blind Pig Butchery opened its doors in October 2025. Jay & Amber didn't just envision a shop with the Blind Pig, but a place for the community to hang out with friends and family on its expanded patio and inside in the cafe. Community has always been at the center of their vision for the Blind Pig.

Jay, Amber, and their two young sons are residents of Waxahachie, TX, and also own 840 Farm, raising Mangalitsa pigs, chickens, bees, guineas, ducks, and a peacock named Kevin.
