Hello!
My name is Chef Stuart Beck. I am a culinary instructor in the School District of Philadelphia. I currently teach a two-year cohort that focuses on the basics of culinary education.
My budding chefs and I are currently exploring the bake shop. During our time in the bake shop, we came across a focaccia bread that has proven to be a, well, let's say a breadwinner! The recipe comes from an internet chef on YouTube, Brian Lagerstrom. This bread is just terrific! We have been selling this amazing loaf on Fridays, and they sell out within thirty minutes. Thank you, Chef Lagerstrom! The funds that we generate from focaccia sales enable us to purchase products and equipment for our culinary program.
There is one thing that we need to make the sales of this bread come full circle. We currently use various-sized pans for the weekly bread production. I believe that purchasing thirty 10" cast iron Lodge or Wagner pans would take these yummy loaves off the charts. This project will also teach our students bread production skills, including measurement, fermentation, hydration, scaling, pricing, and hospitality service skills.
