On 03/17/2025, a devastating fire ripped through Inigo's home in Ocean Beach, San Diego, resulting in a total loss of his residence and vehicle. Though everyone is physically safe, Inigo has lost everything he owns, both personally and professionally - including medical essentials, his house contracting supplies, and the entirety of his Spanish Catering Business, Poseidon's Paella To know Inigo is to know his boundless generosity. He is someone who always shows up for friends and strangers with warmth, humor, and an open heart. For the last decade, I've witnessed the love and care he puts into the dishes he creates, nourishing and bringing joy to others via their stomachs. And if you’ve met Inigo personally, then you've likely experienced one of his extraordinary paellas, where he would "splain you" the entire process, while making you the absolute perfect bite of magic. ✨ Two years ago, he took the leap to launch and grow Poseidon's Paella. It's been incredible to see him light up in this journey. Now, he is faced with the difficult task of starting over.
