Hi, I’m Cory Nickels — and I’m chasing a dream that’s been years in the making.

For as long as I can remember, I’ve been obsessed with great pizza — real, Neapolitan-style pizza made with intention, technique, and the best ingredients I can source. Over the past few years I’ve poured my time, energy, and passion into mastering the craft, and many of you have followed along, tasted my food, and encouraged me every step of the way.

After countless pop-ups, test bakes, and events, I’m finally ready to take the next big leap:

building a mobile Neapolitan pizzeria inside a renovated Sprinter van.

This would allow me to bring world-class pizza directly to communities all over Texas — events, breweries, neighborhoods, you name it. My goal is to operate with the same level of quality and care you’d find at a top-tier pizzeria, but completely on wheels. I truly believe I have a shot at being recognized among the best, and this mobile setup is the key to making it possible.

To make this happen, I’m working to purchase and build out a Sprinter van with a professional setup, proper equipment, and everything needed to deliver the freshest, highest-quality pies wherever I go. It’s a huge undertaking, and after so many of you encouraged me to create a GoFundMe, I decided to open the door for those who want to be part of this journey.

Long-term, the dream is a brick-and-mortar location — a place of my own.

That’s years down the road, but every step forward gets me closer.

I’m beyond grateful for the love, support, and enthusiasm this community has shown me. The fact that people would even consider contributing to help make this dream a reality means more than I can express.
