Barista, holistic cook, yoga teacher, and soon-to-be nutritionist.

I’m starting a sustainable mobile café project in Portugal — a way to honour my mum, who passed on to me her love for coffee and good, nourishing food.

What This Project Is About

Born from a dream to bring coffee, good food, community, and ecology together in the Algarve.

Step one:

In December and January, I’ll start with a pop-up at The Studio Co-Kitchen, a co-creative culinary space run by the amazing chef María — to introduce the concept, test the menu, and connect with the community.

The big goal:

To grow this into a mobile specialty coffee cart for markets, events, caterings, and festivals — bringing mindful, high-quality coffee and food to different places.

The Why

The past year has been deeply challenging and transformative — the end of a long-term relationship, several family losses, and finishing my job at Impact Hub.

But the biggest change by far was the sudden loss of my mum, which turned my world upside down.

Amidst the grief, I realized how fragile life is — and how important it is to live in alignment with what truly matters.

So I decided to take this leap: to move to Portugal (a dream I’ve had for a long time) and create something meaningful, rooted in my values and passions.

What it Stands For

☕ Specialty Coffee

Specialty-grade beans, directly sourced from regenerative farms.

My plan is to work with fair trade and ethical suppliers — celebrating quality and transparency from seed to cup.

Zero-Waste Approach

Nutrient-rich snacks and sweets made with creativity and care, using fermentation and “scrap cooking” to revalue what others might throw away.

Local ingredients, seasonal produce, and minimal waste — always.

The Lifestyle

More than coffee, this project is about connection and inspiration — showing that caring for ourselves and for the planet can be joyful, abundant, and fun.

Why Specialty Coffee Matters

Specialty coffee represents care — for the planet, the farmers, and the people who drink it.

It supports sustainable practices, fair trade, and celebrates diversity in flavor rather than uniformity.

Coffee is one of the world’s most universal rituals — after water, it’s the most consumed drink in the world. Every day, people enjoy over 2 billion cups.

That’s why changing the way we drink coffee can make a real difference.

I believe we can cultivate a world where small acts create big impact — through pleasure, awareness, and joy.

The Bigger Vision

This coffee catering is just the seed of a larger dream:

Start: Launch the mobile coffee cart — the foundation.

Next step: Offer workshops on zero-waste cooking, fermentation, nutrition, and Ayurveda — the practices I’ve learned and love.

Long term: Invest revenue into planting a permaculture garden on a friend’s land, with an open kitchen for farm-to-table meals, retreats, and workshops — a place to reconnect with food, nature, and ourselves.

As we say in Spanish: Soñar no cuesta nada!
