Every great restaurant begins with a story. Mine began at home. In 2003, my world changed when my children were diagnosed with Type 1 diabetes. Not long after, celiac disease became part of our daily life too. Suddenly, the simple things most families take for granted—like sharing a warm slice of bread at the table—became complicated. Bread that was gluten-free was often dry, crumbly, or stale within hours. It didn’t feel like the comfort food it was meant to be. But I’m a parent first. And when your kids can’t eat something safely, you start searching for answers. My kitchen slowly turned into a place of experiments. Bags of gluten-free flour covered the counter, recipes were scribbled on scraps of paper, and loaf after loaf came out of the oven. Some were too dense. Some fell apart. Some tasted nothing like bread at all. But I kept going, because my children deserved better.
Through faith, patience, and a lot of trial and error, something beautiful began to happen. One day, a loaf came out of the oven that was different—soft, fresh, and warm in a way gluten-free bread rarely is. The kind of bread you can tear apart with your hands and share with people you love. That moment planted the seed for my restaurant. This place isn’t just about food. It’s about family, faith, and community. My love for the Lord guides everything we do, and my family is the reason it all started. What began as a mission to feed my own children safely has grown into something bigger: a space where anyone living gluten-free can sit down and enjoy a meal without worry.
