StartUp: Lynette's Bakery and Cafe

My name is Lynette Bofill, I recently moved to Pinehurst, North Carolina to pursue my dream in opening my bakery and cafe.  



Ever since I was little girl, I have been in the kitchen either baking or cooking with my mom and grandmother. I have always had a passion for food, so in high school, I started taking weekend classes at Le Cordon Bleu to learn and grow. I entered into competitions for scholarships to be able to attend Le Cordon Bleu, winning 1st place in the Future Chef of America Culinary Scholarship, 2nd place in the Le Cordon Bleu Culinary Market Basket Scholarship Competition, and 3rd place in Le Dames d'Escoffier scholarship, enabling me to attend culinary school.

After graduating, I landed a job as a baker and pastry assistant in an upscale restaurant in a hotel on South Beach, moving up the line to Sous Chef (assistant Pastry Chef). I had the opportunity to learn different techniques in the art of French baking and cooking from some amazing chefs. From there I went to two other restaurants and worked as a bakery assistant and chef de partie, learning as much as could from different chefs. Before moving to NC, I worked in a bakery as a manager; not loving what I was doing, since it was mainly doing paperwork and some hands-on baking, and not to mention it was mass production of the same product with different flavors. I missed creating and experimenting with different flavors and techniques and felt less connected to the love I have for my passion. People always say “do what you love” and I have always loved baking and cooking so I decided to pack my bags and move to a town where I could bring my passion back to life and where I felt my bakery and cafe could be enjoyed by the community.


As part of the community, I would like to give the town something that it has been missing, Lynette's Bakery and Cafe, a local bakeshop and cafe offering various cakery sweets, breakfast and lunch sandwiches, along with hot and cold beverages, such as gourmet coffees and teas. Lynette's Bakery and Cafe will have a set menu and a blackboard menu. The blackboard menu will change periodically for different seasons, months, and/or holidays, allowing the bakery to use what is in season rather than using frozen products, showing off its creativity and continuing to work to develop and test new flavors. This will give the community something to look forward to in upcoming months.



I have been testing my baked goods and sandwiches with local friends and companies for months now and all have said the same thing—"When are you opening a cafe and bakery?"  I would love nothing more than to be a staple in this community; I have been very passionate about the desserts and food that we provide. 

  

I have put together a business plan, found a location, and started buying equipment. Unfortunately, as a ‘start-up’, the bank will not lend to me because I have no actual record of making money as an established company. I have set a financial goal for equipment (oven, refrigerator, freezer, mixer, storage, etc), renovations of the space off the main highway (construction, electrical, plumbing), and ingredients needed to start the bakery and cafe.

Of course, these are not the only costs, but to really get the business going these are our top priority needed. Starting up a bakery with high-quality desserts along with sandwiches and making a reputation for the business will take time and will carry a large financial burden in the beginning. The café is in need of baking equipment and some kitchen remodeling and I would greatly appreciate it if you are able to donate any amount for this effort.

I intend to get Lynette's Bakery and Cafe up and running by early January 2019, starting off the New Year right! So I am reaching out to my community, friends, and family, to ask for donations to help bring Lynette's Bakery and Cafe to life!
