My name is Steffan Mouton, and I'm on a mission to share the soul-warming flavors of authentic Cajun gumbo with my new home in the Twin Cities.
I grew up in Rayne, Louisiana - a small town deep in the heart of Cajun Country. For most of my life, I lived in and around Lafayette and the Acadiana region, where gumbo isn't just food - it's culture, community, and love stirred into a pot. My recipe is a treasured combination of family traditions passed down through generations, enhanced by skills I've developed cooking diverse cuisines from around the world.

Why I'm Making This Change
After years in the corporate software development world, I'm ready to trade my keyboard for a wooden spoon. Don't get me wrong - I love technology and will use my tech skills to grow this business. But I've discovered that my true passion lies in creating something that brings people together and makes them genuinely happy.
Cooking became my obsession because it's the perfect marriage of art and science. My scientific background fascinates me with the chemical processes happening in every pot, while the creative side lets me craft flavors that tell stories. There's nothing quite like watching someone's face light up after their first spoonful of authentic gumbo - that moment when they taste something that goes beyond just being food and becomes an experience.

The Twin Cities has an incredible food scene, but authentic Cajun cuisine is basically nonexistent here. I want to fill that gap and give people a genuine taste of Louisiana culture - not a watered-down version, but the real deal that my family would recognize and approve of.

My Target and Plans
I'm aiming to raise $8,000 to launch this venture properly. Here's how every dollar will be used:
* Commercial Kitchen Setup: $2,420 ($20/hour for 24 hours/week plus $500 deposit)
* Initial Inventory: $484 for ingredients to produce my first 200 servings
* Professional Equipment: $1,250 for commercial-grade pots, storage, packaging, and essential tools
* Marketing & Launch: $1,050 for targeted social media ads, website setup, and launch materials
* Insurance & Administrative: $750 for business insurance and remaining setup costs
* Working Capital Buffer: $1,000 emergency fund for unexpected expenses
* Any extra will be treated as a safety buffer for unexpected expenses, typical of any business endeavor

Starting Small, Dreaming Big
I'm beginning with direct sales through my website, with customers picking up their gumbo directly from me. This personal touch lets me share the stories behind the food and build genuine connections with my customers. As the business grows, I'll expand distribution while maintaining the quality and authenticity that makes this gumbo special. I've seen this model work with a few examples in my town of Hopkins, Minnesota, so I know it is an effective way to get started.
My target market is local foodies who appreciate genuine, artisanal food - people who understand that the best meals come from passion, not mass production.
If this endeavor really takes off, I would love to see a brick and mortar location where we can promote Cajun art, music, and food all in one location.
