Marty Travis, his son, Will, and wife, Kris, have something special going on at Spence Farm. Overcoming the pressures of big agribusiness, they’ve created a sustainable oasis in Fairbury, IL, where organic varieties of weird crops & livestock grow throughout their land. Tomatoes from the Galapagos Islands grow across the field from a rare breed of American Guinea Hogs - both of these and everything in between are specifically grown for many of the top chefs in Chicago, including Rick Bayless, Stephanie Izard, and Chris Pandel, to name a few. Marty and Will are cultivating these crops that are exposing more of us in Chicago to high-quality, nutrient-dense food every day. They both drive over two hours to Chicago each Wednesday in two small vans, packed to the brim with produce harvested the previous day, but they’d love to have the ability to bring much more.
Here’s where we need your help: Marty and Will found a much bigger refrigerated delivery truck for $9,750 and need to raise funds in time for the pickup date! Help Spence Farm deliver more of the good stuff to Chicago. Because they’re pioneering a sustainable food movement, bringing together a collective of 25 local farms to change the way we eat. Because they take great care of their hogs that just might end up as your prosciutto at The Bristol. Because, simply, we should all eat more of the good stuff.
