Hi friends, Christian here! For those who don't know me I am a private chef in the Western North Carolina mountains. As you know, we have been hit hard with devastating results from Hurricane Helen. My children and I are safe, and we feel extremely grateful for our safety compared to the countless friends, industry friends, and community members facing devastation.
Braised & Confit was and is my passion, and I spent over a decade building the vision to birth its fruition in Asheville & WNC. Braised & Confit is solely run by myself, and it's the means to provide for myself and my children. Not knowing the future of Braised & Confit due to the effects of Hurricane Helen, like many, I am left with uncertainty about when my next paycheck will come.
Some future clients are rightfully requesting refunds for scheduled dinners, and my work is not able to operate under the current conditions, which affects my financial security. There is little support coming through from our government and state for funds. I am asking for the support of my past and future clients and those who have followed my work from the very beginning and have shown me generous amounts of love for my food and art form. I ask that if you feel led to give, it would go towards my immediate needs for my family, and anything left over will be donated to World Central Kitchen, run by a chef I'm inspired by, Chef Jose Andres, as well as other local organizations that local industry friends are creating and supporting.
