Howdy y'all!
Uncle Squatchy here and very excited to announce the next home of the Fatsquatch food cart! We're starting our own all new ENTIRELY VEGAN FOOD CART POD right here in the Cully neighborhood of Portland, Oregon! That's right! Vegans everywhere rejoice!
Our goal is to be a collective of at least 6 entirely vegan businesses with shared indoor climate-controlled seating and A.D.A. restrooms. With room for a projector, we'll be hosting movie nights and throwing fundraising parties for our non-profit friends! Shady Pines Vegan Mobile Food Court will be the perfect place to bring your friends and family for a variety of bites to eat! But we can't do it without you!
We're setting a lofty fundraising goal to really posh up the new spot and set us up to support other fledgling businesses as we all bring this dream to life together.
Last year I was humbled by the outpouring of support I received when I thought I was shuttering my business to undergo gender reaffirming surgery. Through that journey I've come to see what Fatsquatch meant to my community as y'all rallied to keep the dream alive. I'm so grateful to still be here and to be taking this next step. We're creating something special here in NE Portland and can't wait for y'all to join!
