Bring Great Cuisine to St. Charles

Hi Friends and Neighbors,
My name is Juliette Reyes, a young chef who has a dream of creating a great restaurant that I can call my own and share with the World. This “GOFUNDME” campaign originally started out as funding to an awesome gourmet burger and sausage restaurant (which I still plan to open one day soon). But I have GREAT news! I have been given the opportunity to do something even bigger. I have come across a restaurant location with a fabulous kitchen and a wonderful landlord. This location is in the heart of downtown Saint Charles, two blocks away from the river. It is in a historic building that was erected in 1906 and used to house the town’s blacksmith shop.
In addition to this new location, I have noticed the need for great dinner spots in Saint Charles. The demographics over the past 5 years have shifted greatly towards young professionals and young families. These new faces are looking for good food without having to drive into the City of Chicago. I KNOW I can fill this need. A few trendy restaurants have opened recently in Saint Charles, among them a high-end sushi place. They are doing very well, and as the food scene grows in this town, restaurant spaces are being scooped up fast!! Now is the best time to make my dream a reality.
There is a greater challenge in deciding to go with this location. It is larger and will require more work and more money to get open. But I know I can do it! I have been working diligently on my goals in the culinary industry for the past 8 years, learning and growing where ever I can. Now, I am ready to bring my talents and drive to Saint Charles, via "The Finery & Blacksmith Bar", serving new American fare with global influences and local ingredients. Some examples of menu items are “handmade orccietti pasta with sweet greenpea pesto and suckling pig” or “pan-seared local red trout with almond puree and preserved lemon.” It will be a place for young professionals, established community members, and families to enjoy a “Not-so-average-meal” at an extremely fair price.
It has always been a dream of mine to own a successful restaurant, and now that the time is right, I need help getting the funds to do so. I already have a small nest-egg to get the ball rolling, but I need the last bit to complete the job.
This new location in downtown Saint Charles has a wonderful brand new kitchen. The owner of the building used to be in the restaurant business, and you can tell he had a lot of fun putting this kitchen together. However, the Front-Of-The-House still looks like it’s the year 1906 (which does add a bit of charm.) There is wonderful exposed brick and huge tall ceilings. But, I will need a decent amount of help getting it up to where it needs to be. With the small amount of capital I already have, I am able to cover the rent down payment, licensing fees, business fees/taxes, and small kitchen equipment (Pots&Pans, blender, food processor, etc.) Here is the breakdown of the remaining capital I need:
