For over a decade, I have poured my heart into making tamales and salsa, starting as a way to support my family while working toward my dream of becoming a Registered Nurse. I remember in college the teachers told us we would have to find something besides nursing that we love, and pursue it as a passion. I love cooking. Well, after achieving my career goals and attaining my degree, I continued cooking for my loyal customers as a way to thank them for their unwavering support throughout my journey, and also because the taste of my Tamales reminded my customers of "being back home in the RGV (956)". Their encouragement has inspired me to take the next step and bring Ruby’s Salsa Y Tamales to the streets of Montevideo, Minnesota.

Now, I am ready to launch my own food truck and share the flavors and traditions that have meant so much to me and my family. The funds raised will help cover the startup costs for purchasing the food truck and everything needed to run a successful business. My vision is to serve the Montevideo community and surrounding area, participate in local events, and give back to the community by providing meals—especially during the holidays—to those who need it. I hope to create a welcoming space where everyone can enjoy delicious, homemade food and feel a sense of connection brought on by the love of salsa and tamales made with love by me.
