Pink Elephant’s Penelope

When you think of warmer weather coming in sweet Elgin, Oklahoma, what is the first thing you think of?  

When you turn off 44 and head into the main business section in Elgin, what is one of the first things you see, and does it bring a smile to your face?

I think many of us that live in Elgin, Oklahoma would answer with “Pink Elephant” or “Penelope the Snowcone Trailer”! 

Did you know that Penelope was turning 5 this year, and her birthday party was just planned hours before a storm blew in and seemingly destroyed the Penelope we all love? 

Sarah Lile’s Pink Elephant Snowcone Trailer, lovingly known as Penelope, was destroyed in the middle of night on April 22.  In order to get Penelope back up and running, a new trailer must be purchased in addition to other items lost in the storm.

Sarah Lile, owner of Pink Elephant Coffee and Snowcones, is an unsung hero in Elgin.  Whenever there is a need, she humbly and quickly moves into action to help others.  She’s donated countless coffees, snowcones, and giftcards to support events, teachers, and more.   When the covid-19 pandemic caused schools to close, creating much stress and hardship on families, Sarah quickly made bag lunches for any and all that needed them, no questions asked.  She often stocks Elgin’s Blessing Box, and it’s for no other reason than to be a servant for others and help complete strangers.  

Sarah Lile is an incredible business owner, entrepreneur, and community hero, always putting others before herself.  It’s time we join together and support her and her dream of a Snowcone trailer bringing joy to this community.  Penelope did that for 5 years, and she has many more years to come! 

It’s not just a Snowcone stand.
It’s kindness.
It’s memories.
It’s joy.
It’s something we see at local events, baseball games, and birthday parties.

Let’s get Penelope  a new set of wheels.
