Open the Dilly Deli

We are Rachel and Jefe, and we share food as our love language. For over three decades between us, we have cooked and baked and shared this love. Finding inspiration from fresh ingredients, we love using local and seasonal foods from neighboring valleys and farms and gardens right here in Gunnison. The opportunity to adopt 108 N. Main Street as a hub for this love of food is a dream come true!

We are creating the Dilly as a safe and welcoming space where members of our community are nourished by delicious, wholesome food. We are excited to expand our creativity through various pop-up offerings, so stay tuned to our instagram @the_dillydeli

As a former part of the nonprofit sector, social justice and community well-being are of utmost importance to us as we become business owners. At the Dilly, we are conscious of our impact and strive to make it positive. We make food with love and local ingredients, with the hope of leaving things better than we found them - from your belly to our planet. The Dilly aims to be a safe and welcoming environment for all and to continue the legacy of feeding the people. In the future, it is our intention to offer pay-what-you-can meals and pay-it-forward options for customers to sponsor meals for our neighbors in need.

We are raising funds to purchase necessary equipment, place our first ingredient orders, and ensure our family's wellbeing for the first few months of operations.
