I am opening a raw vegan food truck in Hot Springs, Arkansas. I recently purchased a used food truck at a bargain, and we have some repairs and unique retrofitting to accomodate a raw vegan kitchen, which does not employ the use of typical kitchen equipment, that need to be taken care of.
My food truck is called In the Raw Test Kitchen & Juice Bar. We will be providing raw vegan gourmet dishes, such as our signature Sicily Trio (zucchini lasagna, pumpkin seed pesto veggie pasta, and an eggplant ravioli stuffed with mushroom and kalamata filling-see below),
and several other ethnic and American-inspired healthy dishes. We will also be the city's only juice bar. We will be located in at least three food truck court locations around town: one at the Farmer's Market, one on Park Avenue, and the other on Airport Road. We are also looking into a location on Malvern Avenue, which will open in mid-summer.
In addition to the repairs and retrofitting, I am seeking a few extra pieces of small equipment, employee wages, and insurance.
The rest of the money will be put towards a goal that I feel is extremely important. I want to convert my food truck to solar energy and alternative fuel. It's something that reflects our mission to leave no footprint on this Earth. Already the nature of our food is great for the environment, but this will bring my business closer to that vision.
My deadline to open is May 26, 2017. I am graduating from NPC's hospitality program this spring with an Associate's Degree in hospitality administration with several AHLEI certifications and a 4.0 GPA. I also have a Bachelor's Degree in Marketing from UCA. I am a single mother, and opening my own restaurant has been a dream and plan of mine for a very long time. The passion I have for raw food cuisine, which is a fascinating subject to me, has motivated me to embark on this journey.
This endeavor is a means to support myself and my six-year-old without working three jobs again or having to ask family for help. I'm at a place in my life where I have the skills, talent, wisdom, and energy to make this a success. Plus, the market is ripe and the locations are ready for this kind of business here in Hot Springs.
