My name is Luca Albanese, a local resident of Central Valley, New York. I grew up here, attended school here, and graduated from Monroe-Woodbury High School. I continued my education at the Culinary Institute of America. While there I had the opportunity to learn culinary skills and train at a three Michelin star restaurant in New York City. Now, just as I have earned my Associates degree, I've graduated into an industry in collapse.
Coming home from school helped me see that our community is a food desert amid the most fertile land in New York. This is more than evident in the presence of Covid-19. Grocery stores lay half bare and with not a roll of toilet paper in sight, as we try to keep our families fed and safe. Now more than ever our local food producers are in need of help too. With an estimated one third of all farmers facing bankruptcy as local restaurants close, major food corporations have become our communities food lifeline.
As a response to our current times I am working to start a local food truck, Send Noods. Our goal is to source all local produce from farms here in our Hudson Valley region and support the local economy. We hope to keep families fed as the demand for high quality, affordable, nutritious food increases in the difficult times of quarantine, and help keep our farmers employed.
Send Noods is a ramen food truck. Ramen is a nutritious bone broth made with fresh vegetables and meats; accompanied by slim, juicy ramen noodles pared with a variety of toppings such as: smoked and seared ham hocks, soy pickled mushrooms, soft boiled eggs, green onions and so much more!

Chicken
A rich umami packed broth of chicken, onion and mushroom. This ramen is topped with a fermented chili chicken cake, soy pickled mushrooms, sesame seeds, a soft boiled egg and green onions.

Pork
A complex and creamy pork broth that coats your mouth with happiness. This ramen is topped with seared smoked ham hock, bok choy (vegetables change seasonally), soy pickled mushrooms, a staple soft boiled egg and green onions.

Vegan
This ramen is a green tea and lemon grass base, using white miso and a vegetable demi-glace to give it body. All of this bowl's toppings will change with the seasonality of vegetables!
The money raised here on GoFundMe will be used to cover permit applications fixed start up costs and acquire our food truck!
