Mindful Baking Needs New Equipment!

Diane Mejia is a gluten free and vegan baking mastermind. She established Mindful Baking in 2013 to honor the memory of her best friend, Amy, and to revolutionize the way we look at gluten free baked goods.

After being diagnosed with Celiac Disease, (while attending pastry school!) Diane knew she needed to make a change in the world of gluten free baking. She worked tirelessly to avoid grainy, tasteless recipes and to develop her own special blends of flours. She worked for years in shared kitchen spaces, as many bakers do, while continuing to grow and expand her beautiful, little business.

However, her sleepless nights and 7-day work weeks have finally started to pay off, because DIANE FINALLY HAS HER OWN KITCHEN!!

Any baker who has had to share a kitchen before can recognize how much of a triumph this is. Which is why Diane wants to use her kitchen to help benefit others. She would like to offer her kitchen to help other vegan and gluten free bakers in need of a space, which is where the public comes in. The money raised will be used to help Diane get new and much needed equipment to help support the new space, Mindful Baking, and vegan and gluten free bakers in need. The new equipment will also aid in future gluten free/vegan baking classes!

Mindful Baking’s mission is to bring pastries just as good, if not better, than the traditional. Just because something is vegan or gluten free (or both) does not mean we have to limit ourselves to bland, boring, and basic pastries. Having new equipment will help Mindful Baking continue to turn out the delicious treats you’ve come to know and love over the years. It will help provide a safe space that carry zero worries about food allergens. It will help build a community.
