Lulu Food Truck

Howdy! Matt & Melina here. The time has finally come… WE’RE STARTING A FOOD TRUCK!

Our story began almost 8 years ago over a Miller Highlife and talking about Thai food. Through dating, moving to a new state, an engagement, marriage, and moving back to Oregon, cooking for our people and each other has been the consistent foundation of who we are as individuals and as a couple. We have dreamt for years about creating a place for community to gather over the love of creative, bright, comforting food and the time has finally come to introduce: Lulu Food Truck.

Lulu, clichély and appropriately named after our English Bulldog, means an outstanding example of a particular type of person or thing. Our menu is inspired by the flavors of Hawaiian & Korean cuisine, featuring Kalua Pork, Shoyu Chicken, Manapua (Bao Buns), Mac Salad, Korean Fried Chicken, Spam Musubi, Galbi Beef Ribs, Sesame Slaw, Rice, Scallion Pancakes and a variety of rotating seasonal inspired dishes.

We will kick off our journey in July 2023 doing catering events around the greater Portland area while we find a spot for our truck (hire us!!) and by early Spring of 2024 will be making our way out to Joseph, OR to spend our summer serving up food in the cozy courtyard next to the famous Jennings Hotel.

At this point, we have used our savings to purchase a 28ft red BEAUTY of a truck. Now here is where you come in:

We are hoping to crowdfund in order to cover the cost of purchasing kitchen equipment, servicing the truck, excavating the location we are putting the truck to add electricity and hook up to sewage and city water, restroom accommodations, moving costs, initial food costs, first months rent, and permitting from the county & state.

We would not be able to have gotten to this point without the community that we have had cheering us on over the last 8 years. Thank you doesn’t even come close to the immense gratitude we have and we are hoping we can lean on our community now more than ever to help us get past the finish line and into the kitchen.
