Hi friends, it's Lilian here. After years of dreaming about it, I’m excited to share that I am starting a small sourdough bread and pastry program! I'll be taking over Karen's space in the Hills & Hollows Kitchen to keep baked goods available for the Boulder community. Some of you may know that my love for baking started many years ago, before I moved to Boulder. About 10 years ago while watching "British Baking Show'" I had a light bulb go on in my head, I knew I wanted to try baking professionally. I decided to dive deep into to the sourdough baking world and asked a friend for a job at his bakery, named Lodge Bread Company, and believe it or not he gave me the job. I learned so much there while working with many talented bakers and pastry chefs, crafting artisanal, naturally leavened sourdough breads and pastries using a variety of ancient grains that I’ve never heard of before until then! Back in those days we would get to the bakery at night while the entire city was sleeping and we would mill our own flour before sunrise. I felt part of the vibrant bread scene that was happening in Los Angeles between 2015 and 2020.
Since moving to Boulder 6 years ago, I have worked at Hells Backbone Grill as a prep cook, where I learned a lot as well, making biscuits, cookies, muffins, desserts and always trying to choose any baking project I could get my hands on. During this time, I also baked sourdough loaves during the winter months to keep the skill alive and make my friends happy.
To make this dream happen, I need to purchase essential equipment that goes beyond what I’m able to cover personally or through a loan, which is why I’m asking for support from the community. This equipment will allow me to bake consistently, keep food safe, and offer a reliable weekly supply of fresh bread and pastries for the community instead of occasional batches.
Some things I’ll need…

- large dough mixer ($4500)
- small pastry mixer ($400)
- refrigerator ($500)
- pastry oven ($3000)
- dough laminator ($1500)
- miscellaneous supplies (pans, sheets, racks, etc.)
I plan to use the wood oven for special bakes and occasional pop ups, like pizza night and such.
If you’re able to support, even a small amount will help me take this next step. I’m very excited to serve the community with baked goods through all four seasons.
