Lend a hand to a unique start-up food trailer!

Hello friends!

    For those of you who are just meeting me,  my name is Bryan Collins! I'm an entrepreneur and chef for over 20 years. I'd like to first thank you for taking the time to look into our fundraising. My partner Lisa and I are looking to raise funds to help get our food trailer up and running successfully. 

    We are looking to our friends, family and community to help give us a strong push to be able to fund our first few months of inventory and cover initial start up costs. Recently my step father passed away which was unexpected and a huge blow to our family as any loss can be. He was always so encouraging and supportive of all my business ventures. He once shared with me over 30 years ago, (prior to me having any interest in becoming a chef) that he had a dream where I owned my own restaurant called Mr. B's. Of course at that time I thought he was looney toons lol. I had already set in my mind that I was going to be a first round draft pick in the NFL. Well as time carried on,  my goal of becoming a football legend began to fade, however the dream my father had slowly started playing itself out into reality. Shortly after hanging up my football aspirations, I began taking on cooking jobs. I started to fall in love with the creativity I was able to explore in the kitchen. So much so that I went back to school to earn my Hospitality Management degree. Once I achieved that goal, I developed the confidence to step into a culinary career that has given me so many amazing opportunities.

     Being a chef is a career of passion and nothing less. A lot of sacrifice is made through long hours. Sometimes from sun up to sun down.  Missing weekends and holidays with family and friends, school and sporting events for the kids....and vacations?!? Yea right! But I was driven. My culinary journey started from the roots as a line cook, to eventually becoming Chef de Cuisine in a Michelin star restaurant, to building a Catering business and everything in between. My step father encouraged and supported me through every hill and valley. Once he passed away I decided I would commit to see his dream come to life. I resigned from my current occupation and jumped head first into building Oozey B's in his honor.    

      As I'm sure you know,  building a business from the ground up, particularly a food service business,  requires quite a bit of capital. With that said,  I'm excited to share that Lisa and I will be bringing a twist on an American classic, the grilled cheese sandwich! Oozey B's will have 5 or 6 sandwiches to choose from that will highlight a variety of local breads and cheeses. There will also be a few other cheesy treats to choose from! We'll have something for everyone!

     Lisa and I first met at a food truck I was partnered with called Say Cheese Gourmet Grilled Cheese. Grilled cheese actually sparked the love we have for each other so much so that we named our second daughters middle name, Brie! It's pretty amazing to see how things have come full circle. At this time Lisa and I have invested our own finances to obtain our newly built trailer, purchased the required licensing and permits, and have locked in local bread and cheese vendors. We intend on maximizing the opportunity of being a local business and have a strong desire to be a positive, inspiring impact to our community. Not just through blessing bellies,  but we're looking to create and participate in local events where we can serve the community and raise money for youth programs and homeless donations as well. These are areas that we are excited to explore in the near future! We are looking to raise funds to help support our business through its start up phase. Your donation will help provide a foundation for us to successfully begin our journey without being under water.  No amount is too small. Of course we would love to hit our financial goal. But if you are not able to donate at this time,  sharing our story and leaving words of encouragement are just as valuable. We are committed to make you all proud with something for everyone to enjoy. Just fun flavorful food with a little nostalgia and flare!
