11 Years ago, myself Melodi along with my mother Krissy and brother Kristofer, moved here from California in search of a better future. In that time we have fallen in love with Elgin and all that it has to offer.
With hard work and dedication, my Brother and I have brought our love and passion to the Elgin Community.
Kubo Sushi is the combination of traditional Japanese culture and food, with a slight California twist. You will experience a mouthwatering variety of fresh, hand crafted sushi and Japanese cuisine, as well as a variety of Japanese beers and craft sake and hand crafted sake cocktails.
In our 18 months of operation we have made our mark on Downtown Elgin, supporting the rejuvenation of this charming town. It is very exciting to be a part of such a wonderful community and its love of preservation.
With the circumstances of COVID-19 we find our restaurant along with our dream in trouble. We have had to furlough most of our staff during this difficult time which breaks our hearts. We have kept our doors open providing takeout services only. However we now find it harder to stay open and meet the financial needs while only earning a small portion of revenue.
With your support we be able to say open for the duration of the Stay at Home order and be ready for full operation once lifted. It will allow us to continue to pay our staff and provide the exceptional quality of food you know and love.
We have fallen in love with all of the Elgin Community, we want to continue to bring you a memorable experience that keeps you coming back for more.
