Hi! My name is Esteban and I'm a passionate pastry chef and food lover living in Australia.
Unfortunately for the last 10 years, I've been suffering from a condition called Ulcerative Colitis. It's an inflammation of the colon that causes cramping, pain, diarrhea, bleeding and limits your life in so many ways.
It's like a chain reaction: My colon gets inflamed, it hurts, I start having very frequent bowel movements, therefore I eat less, my energy levels drop and I feel tired and depressed. The most annoying part is the fact that it creates a lot of urgency to go to the bathroom and it makes you feel insecure to go out as you will require a toilet near you all the time.
I've also worked in the food industry for over a decade.It's frustrating and limiting as a Chef not to be able to have food you love, some bread a drink coffee is a simple example. I had to cut off gluten, dairy, spice, alcohol and most processed foods.
I've gone through natural, homeopathic and traditional therapies without full control of the disease. 2017-2018 Where really tough years for me as the inflammation was always there without fully going away, despite taking the highest dose of my medications.
After seeing several gastroenterologists in Sydney and Colombia(My home country) I found an innovative therapy by Prof. Thomas Borody at the centre for digestive diseases in Five Dock. Sydney.
He has revolutionized Ulcerative Colitis and Crohn's disease treatment by using a unique method called FAECAL MICROBIOTA TRANSPLANT (FMT) which, in a very straight forward explanation is: Poo Transfer from a healthy donor with great gut bacterias to me.
This has helped so many people in Australia and also the world to improve/ cure their conditions.
The problem with the treatment is that it's incredibly expensive. The required 10 sessions with Colonoscopy included is about +$7500 plus further treatment.
Before receiving my Australian residency I didn't use to get covered by medicare (The Australian public health scheme) so I had to pay full price for all my medicines. My 10 years with Ulcerative colitis have cost me easily more than $25k
This year I started a series of antibiotics as preparation for my FMT treatment. Weirdly enough, I responded well and have had several months of good health. If I stop the antibiotics and go back to normal life I run the risk of getting a UC flare up again unless I go through the FMT Which basically replace all my Gut microbiota and replenish it.
I'd need to do the FMT very soon before and would truly mean the world to me if you can help me. Only once you start losing your health you realize it's the most important thing.
I believe I can be healthy, I believe I will be able to enjoy food in moderation and to cook and grow my business with more joy and passion because I can eat, I have energy and I can leave the house without worrying where the closest bathroom is.
