Who says you can't teach an old dog new tricks?! Hello there. Thanks for stopping by. My name is Gary Shelby, and I want to share a story on how this old dog is blazing a trail chasing his dreams!
Being from Louisiana, I've always respected the cultural tradition of food (not to mention the intoxicating tastes and smells). As a young kid you could always find me underfoot in the kitchen as my mother created tantalizing morsels.
As fate would have it, at 19 I turned my world upside down by joining the U.S. Army! Retiring after 25 years of service, I returned to my passion for food. Using my GI bill, I attended the Louisiana Culinary Institute, earning three degrees (A.A. Culinary Arts, A.A. Hospitality and Culinary Management, A.A. Culinary Arts Baking and Pastry) with a final GPA of 3.94! Also, I was named student of the month, and became the first student in LCI history to achieve perfect attendance during my degree programs from 2015 to 2018!!
After exhausting my GI bill, I'm seeking your help to complete the final leg of my journey. Set on a Caribbean island is a two-week Jamaican culinary cuisine immersion course where I will be privy to learn from professional chefs the age-old flavors, techniques and cultural cooking secrets of this honored culinary tradition. Given my Cajun upbringing, my formal culinary education, and this private venture, there is no stopping me! My dream is to be the owner/operator of a catering company (based in Indianapolis, IN), offering Jamaican-Cajun fusion cuisine with a tropical twist!
I would like the opportunity to go to school by the end of November. Below is a link to the course information.
