When I opened the doors to Ixcanul Guatemalan & Mexican Cuisine in early 2020, I had a vision of sharing the authentic flavors of my Guatemalan and Mexican heritage with the city we’ve come to love. I didn’t know then that only eight weeks later, the world would change.
Since then, it has been a whirlwind. For six years, we have fought to stay open. We’ve worked through the pandemic, the economic shifts, and every challenge in between. We stayed because we love this community, and because this restaurant isn't just a business—it’s how I support my family. Jackson is our home, and we want it to be our home forever.
Where We Stand Today:
While our hearts are full of gratitude for your support, our dining room has been struggling to stay full, the financial "aftershocks" of starting a business right before 2020 have finally caught up to us.
We have always been a family that works for what we have, but right now, we are facing a mountain we can’t climb alone. To keep our doors open, we need to raise funds to cover:
$13,000 in back rent that has accumulated during the hardest months of the past few years.
Past-due payroll to make sure our incredible staff—who are like family to us—are taken care of.
Our Humble Request:
Asking for help is the hardest thing I’ve had to do, but I am doing it for my family and for the dream we’ve poured our lives into. We want to be here to serve you for many more years, and to continue being a part of the Jackson story.
