Hi, I’m Martin and I’m the owner and founder of ille brød sourdough bakery in Oslo, Norway. Our mission at ille brød has always been to make and share recipes for the best possible bread - naturally leavened, using locally grown heirloom and ancient grains, organic and stonemilled. We started our Instagram page in 2012 and have since been a part of a lovely, small and obscure yet international sourdough baking community. We have also written 2 books on sourdough, one of which has been translated to 7 languages.
We started the bakery with the goal of making our bread more directly available, and to make a living off our passion. But even though we have many awesome customers who love what we do, we have always struggled financially. Recently, our situation made a turn for the worse, and we had to lay off most of our great staff.
Now we have two bakers working, doing a fantastic job, and day to day numbers are looking better. So we have hopes of being able to build the bakery up to a sustainable business from here and keep promoting good bread to more people.
But, because we used to have so many employees we now have tax bills and vacation paychecks far beyond our current balance. Because of this, we are getting scarily close to bankruptcy.
We would be incredibly grateful if you would want to chip in with anything at all, to help save a small independent bakery in Oslo. We want to continue to make sourdough bread and share our recipes, experiences and knowledge!
