My name is Rachelle Brinkerhoff, and I am raising funds to help cover my father’s funeral and end-of-life expenses.

This is the official and only GoFundMe created by our family to honor my father and support his final arrangements.

My dad was a deeply kind, generous, and loving man who made a lasting impact on everyone who knew him. His greatest passion in life was Coco’s Mexican Restaurant — a dream he talked about since I was a little girl. I had the honor of helping my dad bring that dream to life, allowing him to do what he loved most every single day.

At Coco’s, my dad poured his heart into cooking, brewing beer, singing, laughing, and spending time with friends, family, and the community. The restaurant wasn’t just a business to him — it was a gathering place, a home, and a way to make the world a little bit happier, one meal and one smile at a time.

His celebration of life will be held this Sunday, but many people who loved him are unable to attend because they live in other countries or far away. This fundraiser offers a way for those who cared about my dad to honor him and give back, even if they cannot be there in person.

All contributions will go directly toward funeral and related expenses, helping us lay him to rest with the dignity and respect he deserves. More than anything, this is a way to celebrate a man who gave so much of himself to others.
