Pizza’s been my obsession since I was a kid. I’ve bounced around the country cooking in resorts, hotels, lodges, you name it—always hunting down the best bites out there. Somewhere along the way I fell head over heels for making pizza, and last year I landed at this tiny food truck in Oregon called Tina’s. Hands down the best pie I’ve ever tasted. The owner gave me her blessing, so I went all in: scraped together some financing, bought a 20-foot step van, and started turning the whole thing into my own rig.

Then winter came along and kicked us right in the teeth. Some dumb mix-up with the storage lot landed the truck in impound. Getting it back ate up almost everything we had saved, and suddenly the money for the build-out was gone. Poof. But quitting? Not an option. So we pivoted. We threw together a little pop-up stand and started hitting every fair, market, and event we could. Serving slices, chatting with folks, keeping the dream breathing while we figured out the next move.
