Let us introduce ourselves. We are Chef Nathan Radford (24 years in the industry), Chef Adam Ruplinger (21 years in the industry), and Barman/Spirit Guide Christopher Cooper (15 years in the industry).
Nathan and Christopher were born and raised right here in Roseburg. Adam came to us from Wisconsin via Portland. Together, and separately, we have run or worked in restaurants in our local community including The Parrott House, Craft 22, Tolly’s, and The Steamboat Inn. We have also worked for years in restaurants in other cities. Adam briefly ran his own catering/wine dinner business called Trellis Wine Dinners. Christopher has a cocktail catering and wedding officiant business called Cooper’s Creative Cocktails.
We are three professionals at the top of our game in a time when restaurants are failing before our eyes due to restrictions and closures due to Covid-19.
The three of us have had to do what needs to be done in order to make ends meet, just like everyone else. But, we want to do more. Not just for us, but for our community.
We realize that, for the time being, our fine dining/high end catering dreams need to be put on hold as people’s funds are as tight as the restrictions place upon us all. We have a new business model that we believe will help us make it through these rough times while providing our community with a little simple comfort food that nearly everyone can wrap their heads around: Catch 22 Fish & Chips. British-style fish and chips with a fresh northwest flare. A little bit of the Oregon Coast right here in Roseburg with always fresh, never frozen, quality fish.
While we were doing business as Craft 22, we did not get as much federal relief as other restaurants because we were a small catering company with no employees. By the time we opened as a real restaurant, federal funds were all but dried up. No relief, coupled with some costly repairs on a nearly 100 year old church, destroyed Craft 22. During that time, Adam was employed at The Steamboat Inn, but quickly found himself out of work due to wildfires that surrounded the Inn.
Here’s the rub. We had very little funds to start this new venture and we’re already nearly dry as we are realizing how much it is costing in fees to open as a new entity in the space that Craft 22 occupied while not being Craft 22.
And, as we dig into this old church, we’re finding other things that need to be addressed, some immediately, some that can be dealt with over time. But, all of which need to be done to make this dream of ours a reality. We need to make some renovations to the building to accommodate a walk up order window to our kitchen. We need to purchase more suitable dining and lounge furniture. We need to make some changes to our kitchen and it’s hood system. We want to find a way to protect and preserve the huge, amazing, original, stained glass windows that are on our building. The stained glass windows, alone, are so important to preserve, not only for their beauty, but for their historical significance and the fact that they survived the Roseburg Blast of 1959.
We ask those of you in our community who believe in us, who believe in this concept, to help us create the best fast casual, British pub style fish and chips the people of Douglas County, and beyond, have had outside of Great Britain.
We are not looking for anyone to pay our wages and we will be absolutely transparent with how we used these funds. We just want to be able to get open, make these repairs and changes, and prove ourselves to our friends, family, fans, and community.
