After a full year of trying to secure financing through banks and SBA lenders, we have not been able to obtain the capital needed to launch our small Puerto Rican restaurant. Every lender we approached declined our requests, not because the concept isn’t strong, but because restaurant startups are considered high-risk and our requested amounts were too small for their programs. Despite these setbacks, the community here in Arlington has shown a huge demand for authentic Puerto Rican food, and we are determined to meet that need.

The funds will directly help us take the first essential steps to operate legally and sustainably. Renting a small kitchen will allow us to produce our food safely, meet health regulations, and increase our production capacity so we can serve more families in the community. Purchasing basic equipment will give us the tools we need to prepare traditional Puerto Rican dishes with consistency and quality. Covering permits will ensure that we can operate as a fully compliant business, opening the door to future growth. These funds will not only help us launch our business—they will also allow us to bring authentic Puerto Rican cuisine to a community that doesn’t have access to it today. Many Puerto Rican and Latino families in Arlington miss the flavors of home, and supporting this project will help create a cultural space where people can connect, feel represented, and enjoy food that brings comfort and tradition.
