If you know Rosa, you know — she’s the heart of Kanab! After 28 years serving up smiles (and the best Chimichagas < (my favorite) in town), her knee’s giving her trouble and insurance isn’t helping. Let’s get her the treatment she needs so she can get her giddy-up back — pain-free and full of sass!

Main Story:

For 28 years, Rosa Escobar has been the heart and soul behind Kanab’s favorite Mexican restaurant — serving up smiles, salsa, and more enchiladas than we can count! She works sunup to sundown (and sometimes past it), taking every order with a grin and somehow remembering nearly everyone’s “usual.”

Recently, though, Rosa’s been fighting through a painful hitch in her giddy-up — her knee has been giving her serious trouble. The doctors say injection treatments can help her get back to moving pain-free, but her insurance company is doing what insurance companies do best… making things complicated.

That’s where we, her community, come in! ❤️

We’re raising $10,000 to help Rosa get the injections she needs so she can get back to doing what she loves — running her restaurant, greeting everyone by name, and keeping that warm, welcoming spirit alive in Kanab.
