Help Rachel Lee Jimmerson Launch Her Food Truck Dream ✨
Life was normal for me until 2010 when everything suddenly changed. At the time, I was a licensed barber and nail tech, passionate about helping people feel confident in their appearance. But that year, my doctor discovered cataracts in both of my eyes—so severe that the one in my left eye was the largest he had ever seen in his entire career as a cataract specialist.
I had surgery to remove them, but only two months later, my retina detached in my left eye. Despite undergoing retinal repair surgery, it was unsuccessful. By 2011, I was forced to adjust to life with vision in only one eye. Still, I pressed on—I worked as a barber, instructor, and even a dental assistant with determination and resilience.
Then in 2021, everything shifted again. While working as a dental assistant, my retina began detaching in my right eye. I underwent emergency surgery, and in order to keep me from going completely blind, my doctor placed a buckle to hold the retina in place. Today, I have vision only up to 15 feet in front of me.
My independence felt stripped away—I couldn’t drive, read, or write the same way anymore. But even through the fear of losing everything, I refused to give up. I’ve always dreamed of going to culinary school, but never had the financial means. With everything I’d endured, I decided it was time to pursue my dream regardless of the obstacles.
In Spring 2023, I enrolled in Houston Community College’s culinary program, determined to prove that being visually impaired would not define me or my future. By Spring 2025, I proudly graduated with not one, but two associate’s degrees—one in Culinary Arts and one in Pastry Arts. I became the first blind chef to graduate from HCC’s program.
Now, my next step is to take everything I’ve learned and pour it into a business of my own: Rachel’s Food Truck. This food truck isn’t just about serving meals—it’s about serving hope, resilience, and the proof that no matter what life throws at you, you can rise stronger.
But I can’t do this alone. I need your help to fund the start-up costs of the truck, equipment, and supplies to bring my vision to life—literally and figuratively.
