For years, we have poured our hearts into sharing Mexican Street Food with our community. During the summer, we set up at local farmers markets, meeting so many wonderful people who have become more than just customers—they’ve become friends. In the winter, we kept the flavors going through a ghost kitchen, making sure everyone could still enjoy our food even when the markets were closed. Throughout it all, we’ve heard one request over and over: a place to sit down, connect, and enjoy our food together. That’s why we’re so excited to take the next step and open our very first brick-and-mortar location, El Colibrí.

El Colibrí means hummingbird, a symbol of intelligence, beauty, devotion, and love. That’s what we’re all about. Our menu is mostly vegan and 100% gluten-free, because we believe everyone deserves to experience the joy of Mexican Street Food, no matter their dietary needs. This new space will be more than just a restaurant—it will be a place for our community to gather, share stories, and build connections, just like we do at the markets. To make this dream a reality, we’re asking for your support. The funds raised will go directly toward securing the permits we need and purchasing tables and chairs to create a warm, welcoming environment.
