Hello, my name is Estefany, and I’m the owner and baker behind Sin Gluten Co., a gluten-free Mexican bakery based in the Central Coast of California. I started this bakery out of necessity. I live with celiac disease and I wanted to create the pan dulce I grew up loving, in a way that’s safe, inclusive, and made with cultura.
Every concha, puerquito, polvorón, and pan I make is baked in a dedicated gluten-free kitchen space I rent part-time. I work a part-time job to fund every ingredient, label, box, and vendor fee but it’s getting harder to keep up.
Right now, I’m raising funds to help me:
• Continue renting kitchen space and cover rising ingredient costs
• Cover health department permits and application fees required to start shipping pan dulce safely across the U.S.
• Expand my menu (sugar-free and dairy-free options) and bring more nostalgic gluten-free treats to the community.
• Purchase packaging and equipment that will allow me to grow
• Eventually transition into a full-time bakery with a permanent home
This isn’t just about baked goods, it’s about creating space for people with dietary restrictions to enjoy the flavors of home again. I’ve poured everything I have into this business (literally and financially), and now I’m asking for a little help to keep going.
