My name is Erin Hurlburt and I am a single mother of 3 living in rural Vermont. I have been running my inhome-bakery Sweet'E's as a side gig for over 10 years. While I have always dreamed of making it my full-time career, as a single mother I I have always been too afraid to pursue it, because I needed health insurance and a guaranteed income for my children.
In March I finally graduated from college (at the ripe age of 37) which freed up my time to bake more. However, in early June 2020, I lost my actual job that provided my kids and I's insurance and main source of income. Due to COVID-19, I am unable to find employment at this time and with the future uncertain in so many aspects for myself and my kids, I am now looking to make Sweet-E's my full-time career. This will offer me a flexible schedule to be able to take care of my children and my own health in a better way.
I had considered continuing to bake out of my home and also remodeling a camper to have a mobile vending spot, but due to Vermont State laws, will not be able to bake out of my home if I take Sweet-E's full-time. This means to make Sweet-E's happen, I will need a space to work out of. While my dream is to one day own a brick-and-mortar shop, I believe that current events would make a mobile bakery (a place to both bake in and sell from) would be my best option.
I know that times are tough for many of us, and that there are people far worse off than I, but if you can find it in your heart, wallet, or piggy bank to donate to a dream, it would be much appreciated.
