My name is Edgar, and I’m excited to share my dream of bringing authentic Cajun seafood to Great Falls with my business, Pluto’s Crawfish. I was born in Georgia, went to school at the Air Force Academy in Colorado Springs, Colorado, and I have been in Montana for 4 years now after coming here with the Air Force. I love everything Montana has to offer, from floating the river in the summer time, backpacking to the Chinese Wall in the Bob Marshall Wilderness, hunting, fishing, snowboarding, and horseback riding. I like to refer to Montana as the last breath of fresh air. Ever since I can remember, I have always loved a good seafood boil and sharing them with friends and family. When I moved to Great Falls, I realized there were no Cajun boils around, and I missed the flavors and experiences I grew up with. That’s why I decided to start Pluto’s Crawfish—to bring something new and delicious to our city.

After doing it for 4-5 months, I saw how much people enjoyed the food and the sense of community it created. That’s when I decided it was time to expand and reach even more people with the flavors I love. I have viewed two spaces in the Holiday Village Mall here in Great Falls, MT, and they would be very suitable for my mission. The funds I raise will go directly toward purchasing additional kitchen equipment, high-quality cooking products, fresh seafood, and covering the extra rent needed for this next step. Every contribution, big or small, will help me create a welcoming spot where friends and families can gather and enjoy something truly special.
