Ever since I was young, I’ve had a deep passion for cooking—especially when it comes to smoked meats. Over the years, I’ve spent countless hours perfecting my craft, experimenting with different seasonings, and learning the art of southern-style BBQ. Now that I’ve truly mastered my recipes, I feel ready to share my love for great food with my community and anyone who’s interested in giving it a try.

Starting a BBQ restaurant in Gainesville is a big dream, but it comes with significant costs. Startup expenses like licensing, permits, equipment, ingredients, and supplies can add up quickly, depending on the location and other factors. I’m committed to keeping my spending on the lower side by searching for used equipment and finding a spot that doesn’t need much work to become the perfect home for Cheech and Cosmo’s BBQ.

My goal is to create a family atmosphere where everyone—no matter their beliefs or background—can come together to enjoy delicious southern-style smoked BBQ. I want Cheech and Cosmo’s to be a place where memories are made and where anyone in need of work can find new opportunities.
